- Start by preheating the oven to 180°C. Prepare a cake tin by lightly greasing it with butter or lining its base with parchment paper.
- In a large bowl, beat the eggs and sugar until the mixture turns pale and doubles in volume. This step is essential to achieve a fluffy cake, so be patient and beat for at least 8-10 minutes.
- Next, sift the flour over the egg and sugar mixture. This process helps prevent lumps from forming and incorporates air. Mix the flour in with circular movements, using a spatula or wooden spoon, taking care not to remove any air.
- Then, pour the mixture into the prepared mold and put it in the oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Once cooked, remove the cake from the oven and let it cool in the pan for a few minutes. Then, unmold and place it on a rack to cool completely.

- Avoid opening the oven during baking, as this could cause the cake to deflate.
- If you wish, you can give it a touch of aroma by adding vanilla essence or citrus zest to the mixture.
